How Indian Catering Works in Bergen County

Every few weeks someone calls us about catering an office lunch, a birthday, or a graduation party, and the first question is almost always the same: how does this actually work? Not the marketing version, the practical one. Here is what we tell them, and what to have ready before you reach out.

What's actually on a catering order

Catering pulls from the same kitchen as everything else we make, which means it pulls from the same menu people already order for pickup and delivery. The dishes that travel best and disappear fastest at events are the ones you would expect: the biryanis, butter chicken, chicken tikka masala, and a spread of the Indo-Chinese menu for a table that wants something with a little more punch. Trays of naan round it out, because a tray of curry without bread to scoop it up is a tray nobody quite knows what to do with.

Beyond those anchors, we build the rest of the order around who is actually eating. Paneer tikka masala and malai kofta are the vegetarian dishes that get requested most, chana masala and dal fry are close behind, and there is enough variety on the Indo-Chinese side — Manchurian, gobi dishes, Hakka noodles — that a mixed group does not have to split into a meat table and a vegetable table.

There is no separate catering menu with different rules than the counter menu. The same goes for dietary variety. There is a genuine vegetarian selection, several vegan dishes such as the dal, crispy onion bhaji, and papad, and most of the curries, biryani, and tandoor items are naturally gluten-free. The wheat items to watch are the naan, the paratha, the samosa pastry, and the Indo-Chinese noodles. If you would rather talk it through before you commit anything to a form, calling us directly works just as well. That is often the faster route for an order with a lot of moving pieces, like a mixed dietary group or a delivery window that has to line up with a meeting schedule.

What to have ready when you plan

A few details make the quote faster and the order better:

  • Headcount, even a rough one. It changes how many trays and what sizes make sense.
  • Date and time, including whether it needs to arrive before an event starts or can land closer to serving time.
  • Dietary needs, specifically: how many vegetarians, anyone who needs vegan or gluten-free, and any allergies worth flagging.
  • Setup, meaning whether this is a drop-off or something that needs to be ready to serve right away.

Larger orders benefit from a little lead time. We are still cooking everything to order in an open kitchen with no frozen ingredients and house-ground spices, and that takes real time when the order scales up from a family dinner to a room full of people. The earlier you reach out, the more room we have to get the menu exactly right instead of rushing it.
